Where It Comes From
Mexico's finest coffee comes from the southern highlands — Chiapas, Oaxaca, and Veracruz — where elevations between 1,200 and 1,800 meters, rich volcanic soils, and a subtropical climate create ideal growing conditions. Many farms in these regions are small, family-owned operations that have cultivated coffee for generations, using traditional shade-grown methods that protect biodiversity and produce a cleaner, more nuanced bean.
Tasting Notes
Our Mexico is a crowd-pleaser with depth. Expect notes of milk chocolate, brown sugar, toasted almond, and a soft citrus brightness. The body is medium and smooth, with low acidity and a clean, sweet finish. It's the kind of coffee that works beautifully at any time of day — morning, afternoon, or after dinner.
How to Brew It
Mexico's smooth, low-acid profile makes it one of the most forgiving and versatile origins to brew:
- Drip / Auto-Drip: The go-to method. A medium grind produces a consistently excellent, balanced cup that highlights the chocolate and brown sugar notes.
- Pour-Over: Use a medium grind, 1:15 ratio, and water at 198–200°F. The pour-over method brings out the subtle citrus brightness and floral undertones.
- Espresso: Mexico's low acidity and natural sweetness make it a surprisingly excellent espresso base — smooth, chocolatey, and easy to dial in.
